Have Pancakes On Pancake Day
recipes for egg-free pancakes?
I’m anaphalactic to eggs and when I was little my gran used to make egg free pancakes for me on pancake day and called them ‘dampas’ or something like that, anyway now I live on my own I cant remember the recipe- does anyone have any egg free pancake recipes? I’m fine with dairy by the way but won’t be able to get egg replacer by tomorrow as I live in the middle of nowhere!
Here is a recipe for Dampas, but I’m not sure it is what you are looking for. I did include a recipe for a good recipe for fluffy egg-free pancakes also. Hope it helps!
DAMPAS
Ingredients:
* 2 cups self-rising flour
* 1/2 teaspoon salt
* 1 cup milk or Beer
Optional:
* 2 tespoons sugar
* 3 tablespoons butter
This bread made by bush settlers can be baked on the open fire or in a regular oven. There are as many variation for making Dampa. Some recipes suggest using beer instead of milk. Some say to wrap the dough around a stick and cook over an open fire.
Mix the flour, salt and sugar together in a bowl. Cut in the butter until fine crumbs form. Add milk or beer to make a soft dough. Knead lightly on floured board until smooth. Shape into round loaf, brush with milk or beer, and bake for 30 to 40 minutes, or until the loaf makes a hollow sound when tapped.

FLUFFY EGG-FREE PANCAKES
Ingredients:
* 2 cups all-purpose flour
* 4 teaspoons baking powder
* 2 teaspoons sugar
* 1/4 teaspoon cinnamon
* 2 cups milk
* 2 tablespoons water
* 3 tablespoons canola oil
* 1/4 teaspoon vanilla
Directions:
Heat a griddle or pan on the stove top. The griddle is ready for pancakes when water dropped on the hot griddle rolls and sizzles. Mix all the dry ingredients. Add the milk, water, oil, and vanilla. Mix well, but don’t over stir; a few lumps are okay. Drop 1/4 cup of batter for each pancake. Flip the pancake when bubbles form and begin to pop. Keep the heat medium to medium low; they burn fast.
