Anyone have any ideas for some recipes for a small dinner party?

Its nothing formal. We’re having dinner with a couple my boyfriend met a couple weeks ago. I haven’t met them and would like to impress them with a simple(ish) tasty meal. Hopefully I can also do most of the prep ahead of time, so I can visit and get to know them.

NO NEED TO LOOK ANYMORE MORE!!! I cook this dish everytime I have new guests over. It’s filling, full of color and is always a hit. CAJUN CHICKEN PASTA!! I actually just made this a few days ago and was able to do the prep work the night before. Just add a simple salad and garlic bread and u have a full meal. Trust me..there will be no leftovers!!
FYI- if you cant find cajun seasoning you can always use a combination of paprika and other red pepper flakes.

Cajun Chicken Pasta

4 ounces linguine pasta
4 boneless, skinless chicken breast halves, sliced into thin strips or a package of chicken tenderloins.
2 teaspoons Cajun seasoning
2 tablespoons butter
1 green bell pepper, sliced
1 red bell pepper, sliced
1 1/2 cups heavy cream
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/2 tablespoon of italian seasoning
1/8 teaspoon ground black pepper
1/2 cup grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear. Add green and red bell peppers; cook for 5 minutes. Reduce heat, and stir in heavy cream. Season the sauce with italian seasoning, salt, garlic powder and ground black pepper, and heat through. Toss in cooked linguine and sprinkle in parmesean cheese. Let simmer for five minutes.
