Valentine Meal Ideas
Any ideas for a tasty vegetarian Valentine’s day meal?

Love the above idea for meatloaf & mashed potato – it’s so homey!

If you want something a little fancier, you could try a red-themed dinner. How about…

Bocconcini (baby buffalo mozarella… comes in little white balls and absorbs vinegar or other flavour really well), fresh cherry tomato, fresh basil & avocado salad. Slice the bocconcini, quarter the tomatoes, and cube the avocado. Shred the fresh basil, and then make a vinaigrette (balsamic, olive oil, dried oregano & basil, a little salt).
OR
You could also do a baby spinach, pomegranate seed (food of the gods), mandarin segment salad, with a dijon, mayo, balsamic, olive oil & maple syrup dressing.

Then do a roasted red pepper soup – it’s so bursting with flavour.

For a main dish, try finding some beautiful red pasta (I get mine from a speciality store – the pasta is dyed with natural dyes and has little extra flavour, so it won’t interfere with your sauce), and do a really nice rose sauce (tomato & cream) with white wine.

For dessert, I’m sure you can think of something particularly appropriate for you two – obviously chocolate is a favourite, but you could also do a Red Velvet cake.
