I want to have a tailgate party for my rehearsal dinner. I am a vegetarian…any advice on what food to serve?

My fiance and I are huge football fans and got engaged while tailgating with friends so this is perfect for us. The problem is I’m trying to plan this and I dont know what is appropriate to serve. HELP
–I am looking for vegetarian and meat dishes to serve. Some of my family is vegetarian but most of the people coming will want meat.

Buy a bunch of flour and corn tortillas and some salsa, guacamole, hot sauce, sour cream, lettuce, tomato, shredded cheese, etc.

Then – set up some skewers with one ingredient on each (one with green pepper, one with redpepper, onion, mushrooms, zucchini, chicken, beef, shrimp, etc.) after marinating them in a fajita seasoning sauce. Grill emp up and let people make their own – with or with out meat.
